Spotted Wolffish with dipping sauce and wonton.
Recipe:
The Spotted Wolffish is soaked in lightly salted water. Use 1 tbsp. salt pr. 6 dl. water.
Boil the water with salt and set aside. Put the fish in and let it soak in the warm water (it must not boil).
Kok opp vann og salt og trekk det til side. Legg i fisken og la den trekke i det varme (vannet må ikke koke!).
Dipping sauce:
1 dl. mirin japanese rice wine
2 tsp. lemon peel
2 tsp. lime peel
1 ½ tbsp. lemonjuice
4 tbsp. chilisauce
3 tbsp. choped coriander
2 choped spring onion
1 red chili
¼ part fine choped red onion
1 tsp. sesame seeds
1 tsp. sesame oil
1 tbsp. soyasauce
Cut and mix all the ingredients together and let it rest before serving.
Wonton filling
250 grams spotted wolffish
1 tsp. salt
1 egg white
1 garlic clove (finely chopped)
2 tbsp. spring onion
1 tsp. grated ginger
1 tsp. salt
1 tsp. poteto flour
0,5 part cold water
Mix alle the ingredients in a food processor into a farce.
Use pre-made wonton sheets. Put 1. tsp. farce into each sheet, take a little water on a finger and stroke it on two of the corners. Fold it into a triangle and then to the form of a tortelini pasta. When the wontons are done, let them soak in hot water for 3-4 minutes (not boiling).
